Restaurant Philosophy

At Ristorante Porcino, origin, craftsmanship and creativity merge into a clear culinary identity. The cuisine is guided by two central ideas: “Dolomites to Sea” and “Nose to Tail”.
Alpine ingredients meet selected influences from the sea, combined with a conscious and respectful approach to the product as a whole. The Dolomites themselves form the starting point. Wild herbs, mushrooms and alpine flavours are brought into dialogue with carefully sourced ingredients from around the world. Many elements are created in-house, driven by the intention not just to interpret flavour, but to shape it. Seasonality is not a concept, but a natural foundation.
This is a cuisine that does not aim for effect, but for depth. Sauces, textures and compositions are designed to express each ingredient in its full complexity. The result is an experience that goes beyond taste – a dialogue between nature, precision and expression.

The Origin of a Shared Vision

Behind Ristorante Porcino are Marco Verginer and Michaela Mair – connected by a story that began long before the restaurant itself. They have known each other since childhood and later reunited in the world of fine dining. While working together in a Michelin-starred restaurant, both their shared vision and their personal bond began to take shape. With Porcino, they have realised this vision: creating a place where cuisine and wine meet on equal terms and form a unified experience. Marco as chef and Michaela as sommelier and host define the spirit of the house, reflected in every detail. Within just a few years, the restaurant was awarded a Michelin star – a milestone that confirms their path, but does not define its limits. Because the story of Porcino is still being written. With every season, every menu and every new idea.

The restaurant reflects a calm expression of contemporary design, defined by clarity and restraint. Its colour palette is inspired by the tones of the Dolomites in autumn – warm, earthy and understated. Large panoramic windows open the space towards the surrounding landscape. In winter, the snow-covered mountains frame the view, creating a quiet and focused atmosphere. In summer, light and openness take centre stage as the Dolomites shift through the colours of the evening.

Vegetarian options 

In addition to our two traditional tasting menus, we also offer a five-course vegetarian tasting menu, designed to showcase plant-based cuisine with the same care, technique, and balance that define our culinary philosophy. Each dish is crafted to highlight seasonal ingredients, flavor contrasts, and textures, providing a complete and harmonious experience even for those choosing a fully vegetarian journey.

Our wine cellar houses over 1,500 labels, including local and international wines as well as rare selections, historic bottles, and vintages. Thanks to direct collaborations with small producers, Michaela personally selects the best wines, always ensuring quality and authentic stories to share. When making your reservation, please review our menu and let us know if you have any allergies so that we have time to formulate an experience that meets your needs.

It is not possible to request a vegan menu.

Dear Guests,

We wish to inform you that dinner in our restaurant is available exclusively through the selection of one of the two tasting menus, and not à la carte.

If you have any special requests or dietary requirements, we kindly ask you to inform us in advance so that we can do our best to accommodate your wishes.

For organizational reasons, we kindly ask groups to choose the same tasting menu. Of course, we will always do our best to accommodate your wishes.

We are also pleased to organize events and corporate dinners at our Ristorante Porcino, offering you a unique experience.

We like very much have our dinner on the terrace and we would be able to do it every day. At 1315m above the sea level, the view is simply breathtaking but at sunset the temperature is not so warm and dining outside is not so enjoyable. We will do our best to let you dine on the terrace during the warm evenings from June till August. Please try not to be so disappointed if sometimes it would not be possible. You can enjoy a glass of wine under the stars ;)  Anyway warm wollen blankets are waiting for you all year long.

Providing credit card details is mandatory to confirm the reservation and ensure high-quality service.

It is possible to cancel or reschedule your dinner at the Porcino restaurant until 12 noon the day before. Afterwards a cancellation fee of €100 per person will be charged.

Due to the open show kitchen, we ask for your understanding that dogs are not allowed in the Restaurant Porcino.
