At Badia Hill, we believe that every meal should end with an unforgettable experience. That’s why, after dinner, we offer our guests an exclusive cheese trolley, presented directly at their table. This carefully curated selection includes cow’s milk and goat’s milk cheeses, as well as cheeses matured by renowned experts such as Degust and Genussbunker, along with exquisite French cheeses from the prestigious "Dieta Select" collection. Everything is accompanied by our homemade mustard.

The Art of Cheese Aging: Degust and Genussbunker

Cheese aging is a delicate process that requires expertise and passion. Founded in 1994 by Michelin-starred chef Hansi Baumgartner, Degust is dedicated to rediscovering, selecting, and maturing niche dairy productions. Using a combination of traditional and innovative methods, Degust ages cheeses in special ripening cellars and a unique bunker that provides ideal temperature and humidity conditions for maturation.

Genussbunker, led by master cheesemaker and beer sommelier Hubert Stockner, follows a similar philosophy. Collaborating with selected Alpine dairies, they obtain high-quality raw milk cheeses, which are then matured in the "GenussBunker." Here, they age for months or even years, transforming into unique delicacies. Stockner is constantly searching for outstanding cheeses, working with small dairies and mountain farms that maintain traditional and sustainable production methods.
