Oberweidacherhof: A South Tyrolean Excellence
The Oberweidacherhof farm, run by the Rottensteiner family, boasts a long tradition of cattle breeding, enriched in recent years by the introduction of Wagyu cattle in 2012. Their passion for this unique meat and dedication to quality led to the birth of their first purebred Wagyu calf in February 2014. Since then, the farm has continued to grow, always with the goal of producing the highest quality beef.
Oberweidacherhof’s approach is rooted in natural and humane farming practices. Wagyu cows graze freely during summer in alpine meadows at 1300 meters, while in winter they are kept in spacious barns on straw bedding, without the use of antibiotics or hormones. This approach not only ensures animal welfare but also contributes to the superior quality of the meat. The animals’ diet is carefully curated: they are fed high-quality mountain hay and grains enriched with grape pomace, brewer’s yeast, and flaxseed, ingredients that promote optimal marbling in the meat.
A Product Unlike Any Other
Wagyu beef is renowned worldwide for its marbling, fine veins of intramuscular fat that make the meat incredibly tender and flavorful. This fat, rich in omega-3 and omega-6, is healthy and gives the meat a distinctive taste. At Oberweidacherhof, only purebred Wagyu cattle (100% fullblood) are raised, sourced from the finest genetic lines of the Japanese Black variety, known for its exceptional marbling.
